Carrageenan is a substance used in food industry as a stabilizer, thickener, and fluidizer. In food industry, it is used to thicken the product, increase its stability and preserve the texture, without changing product’s taste. The use of Carrageenan enable to grant the product a desired “shape” and texture depending on its nature and texture. It is usually used in a concentration of 0.1-1% of the product, depending on product type.
