Monosodium glutamate
Monosodium glutamate is the sodium salt of glutamic acid. Its mark is E621, and it is considered a common food additive and enhancer in food industry. To produce it, plant originated glutamate is usually used, especially from gluten. Monosodium glutamate is used for seasoning in food industry. Its presence in food increases sensation of flavor and gives a “new flavor known as “umami”, a taste that is not sweet, not sour, not salty and not bitter, a rich and spicy taste that grants a feeling of authentic Asian taste. In food industry, monosodium glutamate is found in soup powders of various sorts, tomato sauce for pizzas, various spice blends, sausages, processed meats, sauces, canned or frozen vegetables, rapid-cooking foods, such as pasta or flakes in microwaved bags etc.
